Ingredients
For the Honey Garlic Chicken Drumsticks
- 8 chicken drumsticks
- 2 tbsp olive oil
- 4 garlic cloves, minced
- ¼ cup honey
- 2 tbsp soy sauce
- 1 tbsp ketchup
- 1 tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp fresh parsley, chopped
For the Corn Rice
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 cup sweet corn kernels
- 1 tbsp butter
- ½ tsp garlic powder
- Salt, to taste
For the Buttered Corn
- 2 ears corn on the cob
- 2 tbsp butter, melted
- ½ tsp salt
- 1 tbsp fresh parsley, chopped
Instructions
1. Season the Chicken
Pat the chicken drumsticks dry with paper towels. Rub them with olive oil, paprika, salt, and black pepper until evenly coated. Let the chicken sit for 10–15 minutes while preparing the glaze.
2. Make the Honey Garlic Glaze
In a small bowl, whisk together the minced garlic, honey, soy sauce, and ketchup until smooth. Reserve a small portion for brushing during cooking and serving.
3. Bake the Chicken Drumsticks
Preheat the oven to 400°F (200°C). Arrange the drumsticks on a parchment-lined baking sheet or roasting pan. Brush generously with the honey garlic glaze and bake for 40–45 minutes, turning once and brushing with additional glaze halfway through cooking. The chicken should be caramelized, sticky, and reach an internal temperature of 165°F (74°C).
4. Cook the Corn Rice
Melt butter in a medium saucepan over medium heat. Add the rice and garlic powder, stirring for 1 minute to lightly toast the grains. Pour in the chicken broth and add the corn kernels. Bring to a boil, then reduce the heat to low, cover, and simmer for 18–20 minutes until the rice is tender and fluffy. Season with salt to taste and fluff with a fork before serving.
5. Prepare the Buttered Corn
Boil or grill the corn on the cob for 8–10 minutes until tender. Brush with melted butter and sprinkle with salt and chopped parsley.
6. Serve and Enjoy
Spoon the corn rice onto serving plates and top with the honey garlic chicken drumsticks. Add the buttered corn on the side and drizzle any remaining glaze over the chicken. Garnish with fresh parsley and serve immediately.
Tips for the Best Honey Garlic Chicken
- Marinate the drumsticks in the glaze for up to 2 hours for deeper flavor.
- Brush the glaze on during the final stages of cooking to create a glossy, caramelized finish.
- For extra char, broil the chicken for 2–3 minutes before serving.
- Fresh corn kernels can be used in place of frozen or canned corn for the sweetest flavor.
- Add a pinch of chili flakes to the glaze for a sweet and spicy variation.
Storage & Reheating
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat the chicken in a 350°F (175°C) oven for 10–15 minutes and warm the rice with a splash of broth to keep it moist.
