Ingredients
For the Honey Garlic Chicken Drumsticks
- 8 chicken drumsticks
- 2 tbsp olive oil
- ¼ cup honey
- 3 tbsp soy sauce
- 3 garlic cloves, minced
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp salt
- ½ tsp black pepper
For the Creamy Mashed Potatoes
- 2 lbs potatoes, peeled and cubed
- 4 tbsp butter
- ½ cup warm milk
- Salt and black pepper, to taste
For the Buttered Vegetables
- 3 cups baby carrots
- 2 cups sweet corn kernels
- 2 tbsp butter
- ½ tsp salt
- ¼ tsp black pepper
For Garnish
- 2 tbsp fresh parsley, chopped
Instructions
1. Prepare the Honey Garlic Marinade
In a large bowl, whisk together honey, soy sauce, minced garlic, paprika, onion powder, salt, pepper, and olive oil. Add the chicken drumsticks and toss until evenly coated. Let marinate for at least 15 minutes, or up to 2 hours for deeper flavor.
2. Bake the Chicken Drumsticks
Preheat the oven to 400°F (200°C). Arrange the drumsticks on a parchment-lined baking sheet or roasting pan. Bake for 35–40 minutes, turning once and brushing with the remaining glaze halfway through cooking. The chicken is done when it reaches an internal temperature of 165°F (74°C) and develops a sticky, caramelized coating.
3. Make the Mashed Potatoes
While the chicken bakes, place the potatoes in a large pot and cover with cold salted water. Bring to a boil and cook for 15–20 minutes, or until fork-tender. Drain thoroughly and return to the pot. Add butter, warm milk, salt, and pepper, then mash until smooth and creamy. Cover and keep warm.
4. Cook the Buttered Vegetables
Bring a saucepan of water to a boil and cook the baby carrots for 8–10 minutes until tender. Drain and toss with 1 tablespoon butter. In a separate skillet, melt the remaining butter and sauté the sweet corn for 3–4 minutes. Season both vegetables with salt and black pepper.
5. Assemble and Serve
Spoon a generous portion of mashed potatoes onto each plate. Add the honey garlic chicken drumsticks, buttered carrots, and sweet corn. Drizzle any remaining pan glaze over the chicken and potatoes, then garnish with fresh parsley before serving.
Tips for the Best Honey Garlic Chicken
- Pat the drumsticks dry before marinating for better caramelization.
- Brush the chicken with glaze during the last 10 minutes to achieve a glossy finish.
- Warm the milk before adding it to the potatoes for extra creamy mashed potatoes.
- For a richer flavor, stir a tablespoon of sour cream into the mashed potatoes.
- Add a pinch of red pepper flakes to the glaze for a sweet and spicy variation.
Storage and Reheating
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat the chicken in a 350°F (175°C) oven for 10–15 minutes and warm the mashed potatoes with a splash of milk to restore their creamy texture.
