Ingredients
For the Crispy Herb Chicken
- 2 chicken leg quarters
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp dried thyme
- 1 tsp salt
- ½ tsp black pepper
For the Golden Fries
- 4 large potatoes, cut into fries
- 2 tbsp vegetable oil
- ½ tsp salt
- ½ tsp paprika
For the Fresh Salad
- 2 large tomatoes, sliced
- 1 red onion, thinly sliced
- 1 tbsp fresh parsley, chopped
For the Herb Yogurt Sauce
- ½ cup plain Greek yogurt
- 1 tbsp fresh dill, chopped
- 1 tsp lemon juice
- 1 small garlic clove, minced
- Salt and black pepper, to taste
Instructions
1. Season the Chicken
Pat the chicken leg quarters dry with paper towels. In a small bowl, combine olive oil, paprika, garlic powder, onion powder, thyme, salt, and black pepper. Rub the mixture evenly over the chicken and let it marinate for 20 minutes at room temperature.
2. Prepare the Fries
Preheat the oven to 425°F (220°C). Toss the potato fries with vegetable oil, paprika, and salt until evenly coated. Spread them in a single layer on a large baking sheet lined with parchment paper.
3. Bake the Chicken and Fries
Place the seasoned chicken on a separate baking tray or on one side of a large sheet pan. Roast for 40–45 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is golden and crispy. Turn the fries halfway through cooking to ensure even browning.
4. Make the Herb Yogurt Sauce
In a small bowl, mix together the Greek yogurt, dill, lemon juice, minced garlic, salt, and pepper until smooth and creamy. Refrigerate until ready to serve.
5. Prepare the Salad
Arrange the sliced tomatoes and red onion on a serving platter. Sprinkle with fresh parsley for a simple and refreshing side salad.
6. Serve and Enjoy
Place the crispy herb chicken alongside the golden fries. Add the tomato and onion salad and a generous spoonful of herb yogurt sauce. Serve immediately while hot and crispy.
Tips for the Best Crispy Chicken and Fries
- Pat the chicken dry before seasoning to achieve extra-crispy skin.
- Soak the cut fries in cold water for 30 minutes before baking for crispier results.
- Use a wire rack when roasting the chicken to allow hot air to circulate evenly.
- Fresh dill gives the yogurt sauce a bright flavor, but parsley or chives also work well.
- Add a squeeze of fresh lemon over the chicken before serving for extra freshness.
Storage & Reheating
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat the chicken and fries in a 375°F (190°C) oven or air fryer for 8–10 minutes to maintain their crisp texture.
