- 6 large eggs

For the Home Fries
- 3 medium potatoes, diced
- 1 tbsp olive oil
- ½ tsp garlic powder
- Salt and black pepper, to taste
For Serving
- 1 cucumber, sliced
- 2 tomatoes, sliced
Instructions
Step 1: Prepare the Sausage Patties
In a medium bowl, combine the ground sausage, garlic powder, onion powder, black pepper, and paprika.
Mix gently and divide into 8 equal portions. Shape each portion into a small patty.
Step 2: Cook the Home Fries
Heat olive oil in a large skillet over medium heat.
Add the diced potatoes and season with garlic powder, salt, and pepper. Cook for 12–15 minutes, stirring occasionally, until the potatoes are golden brown and crispy on the outside and tender inside.
Transfer to a plate and keep warm.
Step 3: Pan-Fry the Sausage Patties
Using the same skillet, add the olive oil and cook the sausage patties over medium heat for 4–5 minutes per side, or until browned and fully cooked. The internal temperature should reach 160°F (71°C).
Remove from the skillet and set aside.
Step 4: Make the Scrambled Eggs
In a bowl, whisk together the eggs, milk, salt, and pepper.
Melt butter in a nonstick skillet over low heat. Pour in the egg mixture and cook gently, stirring frequently, until the eggs are soft, creamy, and fluffy.
Remove from the heat immediately to prevent overcooking.
Step 5: Assemble and Serve
Arrange the sausage patties, scrambled eggs, and crispy home fries on serving plates.
Add the sliced cucumber and tomatoes on the side. Garnish the eggs with fresh dill and a light sprinkle of paprika.
Serve immediately.
Tips for the Best Breakfast Plate
- Cook scrambled eggs over low heat for the creamiest texture.
- Dice the potatoes evenly so they cook at the same rate.
- Let the sausage patties rest for a few minutes after cooking to keep them juicy.
- Add shredded cheese to the eggs for extra richness.
- Fresh herbs like chives or parsley also make great garnishes.
Recipe Variations
Cheesy Scrambled Eggs
Stir in shredded cheddar or mozzarella during the last minute of cooking.
Spicy Sausage Patties
Add red pepper flakes or cayenne pepper to the sausage mixture.
Loaded Home Fries
Mix in sautéed onions and bell peppers with the potatoes.
Low-Carb Breakfast
Replace the potatoes with sautéed spinach or avocado slices.
Storage & Reheating
Store leftovers in airtight containers in the refrigerator for up to 3 days.
Reheat the sausage patties and potatoes in a skillet or air fryer until warmed through. Scrambled eggs are best enjoyed fresh but can be gently reheated over low heat.
